Indian Independence is celebrated this month at Sanjiv Dhar's four restaurants : Chaska in Cranston, Kabob & Curry in Providence, Rasa in East Greenwich and Rasoi in Pawtucket.
Special menus at each restaurant will showcase India's diverse cultures and culinary heritage sharing all the unique flavors from the Asian nation. A special regional Thali menu will be served through Aug. 31.
Each Thali is a round platter filled with a variety of dishes, providing a complete meal experience showcasing the cuisine.
In Pawtucket, Rasoi will feature the tastes of Gujarat and Maharashtra from Western India. The dishes on the Thali plate include Khaman Dhokla lemon gram flour cakes, Undhiyu mixed vegetables, Chicken Kolhapuri curry with Sindhi Mutton Biryani and Gujarati Dal tangy lentils. The platter costs $24 per person.
Cranston's Chaska will feature modern South Indian cuisine. The dishes include Parmesan Crusted Broccoli Uttapam crepe, Andhra Style Chicken Curry, Sri Lankan Barbecue Lamb, Vegetable Malabar Curry, Tamarind Rice Pulao and Rava Kesari, cream of wheat sweetened with saffron and nuts. The platter costs $24 per person.
In East Greenwich, Rasa will feature East Coast flavors of India with Chicken Momo, dumplings with seasoned minced chicken, Kosha Mangsho Lamb stew, Chingri Malai Curry, Doi Begun baked eggplant and spiced yogurt and Bengali Fried Rice. The platter costs $24 per person.
At Kabob & Curry, the rustic flavors of North India are featured. Each platter, $18 per person, features Aloo Tikki Chaat, a savory potato patty; Butter Chicken; Kashmiri Lamb Rogan Josh; Bhindi Do Pyaza, sautéed okra; Dhabey Ki Dal, lentils; Vegetable Pulao; and Rogini Naan.
